Harvesting
After about 13-15 months of living and thriving off of the rich nutrients of the Penn Cove, our mussels are ready to be harvested. As our mussels grow on lines of the rafts, our harvest barge will navigate to the rafts with mussels ready to be harvested, as we have rotating crops year round. By doing so, it allows Penn Cove Shellfish to have a steady supply of Penn Cove mussels.
Once orders have been placed, the message will be relayed to our farm crew and they will harvest that exact amount for the day. As we harvest our Penn Cove mussels, they will be washed, debearded, graded, weighed, and bagged. After all the mussels have been harvested for the day, our barge will head to shore for the product to be offloaded int our refrigerated delivery trucks.
Distribution
Once our Penn Cove mussels have been packed and weighed, our mussels will be placed into insulated Penn Cove Shellfish totes. Each tote is layered with ice and is filled with bay water, to keep our mussels in a pristine condition.
After all our mussels have been packed, they’ll be taken to shore and packed at our HACCP certified packing facility. From here, mussels will be loaded into our refrigerated trucks for immediate delivery.
Our trucks are on the road and at the airport five days a week, guaranteeing our customers the freshest shellfish possible. Penn Cove mussels are available not only in the United States but also available for shipping across the world!
