BBQ Pacific Oysters with Bacon Cajun Butter

Serves 4 – 15 minute prep – 10 minute cook

Ingredients:

  • 1 dz BBQ pacific oysters, shucked

  • 4 strips of bacon, diced

  • 1 tbsp Cajun seasoning

  • 3 cloves garlic, minced

  • 1 tbsp lemon juice

  • Parsley for garnish

Directions:

  1. Place bacon and shallot in a small skillet. Cook until bacon is crispy, stirring occasionally.

  2. To make the Cajun Bacon butter, combine butter, bacon, shallots, Cajun seasoning, garlic, hot sauce, and lemon juice. Mix well with a fork.

  3. Spoon 1-2 tsp of the room temperature cajun bacon butter on top of each oyster. Place oysters on a baking sheet.

  4. Heat grill to medium-high. Once grill is hot, transfer oysters to grill

  5. Cook the oysters until liquid and butter surrounding the oyster meat is simmering about 3-5 minutes. Remove from the grill

  6. Sprinkle oysters with parsley and serve!
